Pepper plant is a perennial climber with dark green leaves and spikes of white flowers. The peppercorn is a berry like drupe, green when unripe and then red. Black pepper comes from whole fruit, picked just before they are completely ripe, white pepper from ripe fruits with the endocarp of the pulp separated for fomentation.
Producing Regions
India contributes to about 25 to 30 per cent of the world production. Of this Kerala state is the major producer followed by Karnataka and Tamil Nadu. The Union Territory of Pondicherry, Andhra Pradesh, Orissa, Assam, West Bengal, Andaman & Nicobar Islands, Meghalaya and Tripura have taken up pepper cultivation.
Grades
Two of the most celebrated varieties of Indian black pepper are "Malabar Garbled" & "Tellicherry Garbled Extra Bold". India also offers green pepper in several processed forms - frozen, dehydrated, freeze dried and pepper in brine.
