Sambar

Ingredients

• Tomato (Diced)                - 2 nos
• Potato (Diced)                  - 3 nos
• Carrot (Diced)                   - 1 nos
• Onion (Diced)                    - 3 nos
• Lady's Finger (Diced)       - 3 nos
• Cucumber (Diced)            - 1 nos
• Brinjal (Diced)                   - 1 nos
• Elephant Yam (Diced)     - a small size
• Drum Stick (diced)           - 1 nos
• Gram Dhal                         - 50 gm
• Vayalil Spices Sambar Powder - 2 Tbsp
• Turmeric Powder              - a pinch
• Tamarind                            - as necessary
• Shallot (sliced)                   - 4 nos
• Red Chilli                             - 3 nos
• Mustard                               - 1 TSP
• Curry Leaves                       - as neede
• Salt                                        - to taste.

Preparation

Recipe Cook Time: 30 Minutes
    Add the diced vegetables like potato, carrot, cucumber, brinjal, elephant yam and gram dhal in a pressure cooker with enough water and cook until the vegetables become soft. Heat a pan with 2 Tbsp coconut oil and add lady's finger, onion, tomato and 2 Tbsp of Vayalil Spices Sambar Masala, turmeric powder and sauté it well. Then, add this to the cooked vegetables. Squeeze tamarind in water and pour the tamarind water into the lentil. Bring it to boil. Add salt for taste. Heat another pan with coconut oil and add mustard, shallot, curry leaves and Red Chilli. Season the sambar with this. Serve it hot along with Dosa, Idli or Rice.
